F A R M I N G
Our 600 olive trees are tended with a philosophy of patience over production. Tree varieties from Italy, Spain, Greece, and Israel thrive in the sandy dunes of Mangawhai, absorbing minerals from subterranean spring water. No synthetic sprays. No shortcuts. Just the art of slow, responsible cultivation.

H A R V E S T
Timing is everything. Olives are handpicked in small batches during the cool of early morning, when flavour and polyphenol levels are at their peak. This gentle harvest preserves the integrity of the fruit, ensuring minimal bruising and optimal freshness.

P r e p a r a t i o n
Immediately after harvest, olives are cleaned, milled, and malaxed – a process of slowly churning the olive paste to encourage oil droplets to coalesce. Temperature is carefully controlled to preserve the oil’s volatile aromas and vivd taste.

E X T R A C T I O N
Through pressing and centrifugation, we separate oil from solids and water without heat of additives. The resulting oil retains its purity, colour, and complexity. An untouched expression of the fruit and land.

S e p a r a t i o n
Using both natural decanting and second-stage centrifugation, any remaining particles or water are carefully removed. This slow process enhances clarity, stability, and mouthfeel without the need for aggressive mechanical intervention.

F I L T R A T I O N
The oil is gently filtered to remove trace sediment, preserving its freshness and extending shelf life while maintaining its soft, clean character. The result: an elegant oil, bright in flavour and brilliant in clarity.

S T O R A G E
Before bottling, the oil rests in stainless steel tanks under nitrogen and at controlled temperatures to protect it from oxygen, heat, and light. This allows flavours to settle and refine while preserving freshness to the moment of pour.

B O T T L I N G & L A B E L L I N G
Finally, the oil is transferred into dark glass bottles – chosen to prevent light exposure, sealed with care and labelled by hand.
