A SHOW-STOPPING STARTER THAT LETS THE OIL SHINE.
SERVES: 4 / TIME: 20 MINUTES
Ingredients:
• 2 Ball of burrata cheese, room temperature
• 2 Cups seedless black grapes
• 2 tsp flaky sea salt
• 1 Handful fresh basil leaves
• 1 tbsp aged balsamic vinegar
• 3-4 tbsp Tara Iti Olive Oil
• Cracked black pepper to taste
• Rustic sourdough for serving
Method:
- Heat a skillet or grill pan on high until nearly smoking. Add grapes and sear until their skins begin to blister and caramalise (about 3-5 minutes)
- Transfer grapes to a platter. Gently tear burrata and nestle among the grapes.
- Add basil leaves, a drizzle of balsamic, plenty of fresh ground pepper, and a luxurious pour of Tara Iti Olive Oil
- Serve with crusty sourdough, lightly warmed
This dish is all about contrast – cool cream, smoky fruit, sharp vinegar, and the buttery finish of the oil tying it all together.
