A coastal twist on the classic Oliveto, elevated with citrus and silk.
Serves: 1 / Time: 5 Minutes (+ optional prep for fat-washing).
Ingredients:
• 45ml London dry gin
• 15ml Lemon juice, freshly squeezed
• 10ml Simple syrup
• 15ml egg white (or aquafaba for a vegan version)
• 3-4 Drops Tara Iti Olive Oil
• Optional: Olive oil-washed gin (see method below)
• Garnish: fresh thyme sprig or lemon twist
Method:
- (Optional) Olive Oil Wash: combine 200ml gin with 20ml olive oil. Shake, freeze for 1 hour, then strain. The gin takes on lush notes and a smoother mouthfeel.
- Combine all ingredients (except garnish) in a shaker and dry shake (without ice) to emulsify.
- Add ice, shake again vigorously
- Fine strain into a chilled coupe glass
- Garnish with thyme or a citrus twist, and finish with a delicate drop of Tara Iti Olive Oil on the foam.
